In my opinion you got it! I sharpen all of my wife’s kitchen knives to 1000 and that is it. I have gone to 1500, film and strop but she prefers the tooth to cut the tomatoes..

Timm you may be interested in a Kit I make for the scope to assist in using it by hand when sharpening. Fixes a bunch of issues with the design that come to light when using it for the specific purpose viewing the entire blade (sides and well as the apex whil looking down) while sharpening.

That is actually are very good idea. The 50/80 stone rips the crap out of the steel, I bet a file might take a bit longer but be less destructive with softer steel. Not experienced enough to guess what it would do to hard steel. I am guessing there are a few members here who may have tried this.

The surface that contacts the blade is .9mm thick so there really is no room for a grove.. I get why it would be very cool to have, but alas, not really all that possible…

Since buying my WE system and a pluggable USB scope a few years ago, I have had a love hate relationship with the Scope. The dimond stones don’t realy need to be covered and dont’ cross contaminate. That is just an issue that can occure with strops that you apply different grit medium to. You don’t want your strops to touch each other or rub on the same surface as one of the other strops with a differnt grit did.

I guess the point I was tryin go make (should not post when in a grumpy mood 🙂 is spending hours to polished a bevel so it looks cool, is not necessarily going to make it cut better than if you stopped when it was sharp. Ever time I wasted the time to polish the knife to a shinny finish, my wife would say.. “I thought you sharpened this, it won’t cut the tomato skin”…I now stop at 1000, strop the lower should over and she is happy.

if you have spent sufficient time with each grit you should have no catches.. I only sharpen to 1000 for my wife’s kitchen knives as that is what cuts best for her use.. there are no catches when slicing the phone book paper.
