Since you guys are talking kitchen knives, take a look at chef knives to go (.) com if you haven’t already. They have a selection of japanese knives that make my wallet cry and my wife threaten me with the couch on the porch (it’s bloody bold at night).

Thank you Marc for the link, now I just have to try convexing the apex on a knife, just to see how that works. Fortunately, 99 cents store supplied a bushel of knives for me to practice on.

I’ll have to echo the others, the WE 130 is a bit more versatile and a good place to start. Each model has its pros and very few cons but the WE 130 is the one I chose and am very happy with. From looking at my Hinderer, the blade stock does seem to be thicker than your average folder. I haven’t had a need to sharpen it yet but I’ll follow this thread to see your solution. Even though I’m a “babe in the woods” when it comes to the higher end steels, I can say that of the few folders I own, the ones with M390 blades do seem to get sharper and retain the edge longer compared to the CPM 154 and S35 VN. I did try it and cut nice little slivers out of the dlfs. I didn’t do it on purpose, I just got carried away with alternating edge-leading and edge-trailing strokes between grits.

I agree with you guys, protecting the family jewels is paramount! I happen to have the Finish Line grease/lube @Expidia posted but hadn’t used yet, mainly because I forgot I had it. I will give it a go in the near future.

Looking at all three knives, the micro bevel is on both sides. The best I can describe it is a partial saber with a zero grind (well, sort of zero grind since it has a micro bevel on both sides of the edge). I must add to my above post that the stones stand draws heavily on MarcH’s idea, mine is more “compressed” to fit the width of the top used. My thanks and gratitude to MarcH for his help and guidance, many thanks to tcmeyer and NotSharpEnuff for sharing the great ideas and talent.

Staying with the same though outlined by tcmeyer, would it make a difference if you use a edge trailing (?) downward stroke?
