    Is this your preferred method for sharpening? I tried it and it was interesting, but I’m not sure that I posses the coordination to make it work for me as a go to method.

    Sounds like a great idea but given that some days I don’t seem able to walk and chew gum at the same time……I will give it a try on one of my better days.

    This is not my go to method. When I am scrubbing each side on a knife (which has never seen the WEPS in order to set the profile and raise the perfect burr) I get tired of the “on and on” scrubbing. The knife in the video is one of a set of four. It took me ~50 hard determined scrubs per side to raise a full burr at 20 DPS (15-20 mins). I was looking to reduce that time but have not used the double stroke enough to determine the time savings.

    Maybe my 100 grit is worn out but then again I do not know how to determine when that is. I do not have the 60/80 grit as I feel they may be too aggressive for nice kitchen knives. I would also have to wear-in the new diamonds which is a PIA and should be unnecessary IMO but I have already accepted that shortcoming.
