There are a few options. One is to go for a wider angle. I know that’s a compromise, but it will work and you don’t need anything extra.

Go check out MarcH’s thread on How I find the sweet spot. The answer you seek is in that thread. Basically, you just need to play around with the position of the knife in the clamp a bit more in order to find a spot that is a better compromise. I remember from a video that Josh made that the number of washers went back and forth during the prototyping stage of the clamp development. I don’t think there’s any problem caused by removing a set of the washers.

This is why it is best to use results rather than an arbitrary number of strokes to guide the sharpening process. You probably failed to apex the bevels. You will be well served to go back to a lower grit and sharpen until you feel a burr.

I’m enjoying seeing the process of the conversion, but that looks like tons of work.
For the amount of effort it takes to modify a Harbor Freight belt sander into a suitable sharpening platform I’d gladly just pay more for one of the name brand setups that’s ready to go out of the box. I’m lazy.

Yes, the Wicked Edge sharpeners are expensive but also amazing and totally unmatched in precision and quality. With all of your sharpening experience I’m sure you can truly appreciate the ease of use and consistency of the results that these fine tools provide.

I think all of those knives will fit. The very narrow knives (fillet and paring) might require the use of an obtuse angle to prevent the clamp from getting in the way of the sharpening stones. The low angle adapter can help with that. Also, fillet knives require extra care since they are usually quite flexible, but they can be sharpened.

Your knives will still get sharp during the break in period for the stones. Once the stones are worn in then the knives will become sharp to a greater degree.
