Other things to remember is there is no time limit.. the WE is a “Hand” sharpener, it just holds the stones at the fixed angle… It takes as long as it takes for the steel to be removed during each grit, so counting strokes is not really a useful or meaningful venture. Relax and have fun.

Hold it how you have the most control over it, just like you would if you were sharpening free hand.. you think those guys don’t change the angle as they go.. They just don’t stop and look at it with a microscope..

I would grab a knife that has been in service for a while and touch it up with the new stones.. Will take much more work to clean it up but will also break in the stones

Welcome to the forum!  Most everything has been asked at some point in time as the WE has been around for a while, but many times the search feature is not all that helpful.  If you can not find the info, please ask,  folks will  either answer outright or point you to a post that has the answers!
