Other things to remember is there is no time limit.. the WE is a “Hand” sharpener, it just holds the stones at the fixed angle… It takes as long as it takes for the steel to be removed during each grit, so counting strokes is not really a useful or meaningful venture. Relax and have fun.

If it works for you it is not wrong. I don’t even bother going past 1000 anymore, my cheap kitchen knives cut what my wife cuts, much better stopping at 1000 than if I make them all nice and shiny with a fine toothless bevel. Hold it how you have the most control over it, just like you would if you were sharpening free hand.. you think those guys don’t change the angle as they go.. They just don’t stop and look at it with a microscope..

Leo the reason this happens has nothing to do with quality, it is a fact of Geometry. I am no expert on the subject but do understand why this occurs. The system is designed to be fairly accurate using the marking when the top edge of the bevel is 5/8 of an inch above the vice. I would grab a knife that has been in service for a while and touch it up with the new stones.. Will take much more work to clean it up but will also break in the stones
