From my personal experience, you should sharpen the knife for her. Don’t try and replace her knife, it is hers, even if you know she is doing it wrong, it is how she does it and likes doing it. I assume that part rotated in the housing if need be, have not taken mine apart to look at it, grease be it petroleum or silicone would cause the socket to “stick” in the housing but still move as it would be lubricated.. Not sure if that part is supposed to rotate but I assume not so sealant would be fine if that is the case.

Marc, I am guessing a tiny dot of grease on the shaft of the “Jesus sockets” before putting them on the housing would help in the not getting lost department. Lets start off by saying your opinion matter, and you are not being critical, you are asking valid questions. To me the WE60 is not an upgrade from the 50 it is a direct replacement. Look into installing Linux Mint on the old laptop, it is very windows like.. not hard to get used to and if just browsing really not much different..

Looks like you are trying to find the sweet spot.. where to clamp the knife so the angle changes the least.. It is sometimes more work than needed .. if the knife is not relatively straight, I just do it in sections an change the where and how it is mounted to make the section level.. Welcome Tom, there a few engineers here who may have enough math skills to discuss with you but by far most of us are just normal joes who want a sharp knife to cut whatever that particular knife would be used to cut. I believe Ed replaces the threaded rod in the aftermarket ball joint. It is a rather time consuming, manual process, from what I have been told.

I have taken to doing my wife’ s boning knife in stages and then over lap them, rather than trying to mount in a manner that lets me do it in one setting.. In other words.. do all the grits, remount, do them all again over lapping and then one more time for the tip..

Nice Knife and great idea on the scissor jack! You will find the bottom stone stop very helpful when setting the angle. You can place it so the stone is centered on the the blade for a more stable measurement, assuming you are using the digital angle cube.

In my opinion you got it! I sharpen all of my wife’s kitchen knives to 1000 and that is it. I have gone to 1500, film and strop but she prefers the tooth to cut the tomatoes..

Timm you may be interested in a Kit I make for the scope to assist in using it by hand when sharpening. Fixes a bunch of issues with the design that come to light when using it for the specific purpose viewing the entire blade (sides and well as the apex whil looking down) while sharpening.

That is actually are very good idea. The 50/80 stone rips the crap out of the steel, I bet a file might take a bit longer but be less destructive with softer steel. Not experienced enough to guess what it would do to hard steel. I am guessing there are a few members here who may have tried this.
