I try to start each knife I’m sharpening with the least coarse or finest grit stones that get the job done efficiently. That is quickly and without too much effort extended. Dwight, what are your criteria for determining when you employ the 50/80 stone pair? From what you wrote it almost seems your saying you use it for every knife you sharpen????

My preference is to use whetstones (mounted on W.E. paddles) for any knives made from steels that are HRc 60 or harder. That’s not to say you can’t use the diamond stones on some harder steels. That’s an older model Commercial Series Sharpener. It has since been redesigned and updated with the newer version Gen 3 vise system. I think you’ll be better served to take your questions directly to Wicked Edge. There’s been no conversation on this forum around that model in my years of participation.

I should have said, a 25º bevel on a fairly narrow width or thin bladed knife can appear very small. The wide angle is shorter appearing than the narrow angle bevel, on the same knife blade. You may find it easier to see a red or blue ink sharpie marked bevel. (I usually recommend the black sharpie because many people already own that sort of marker.)

The Shapton Pro Stones in my experience work quite well. I would not consider them soft stones. They don’t seem to wear down fast. I’m able to sharpen several knives with the most often used grits, before I need to lap them to level them out. I’ve never worn any out.

I was afraid that there may be a bevel applied to the right side. It looks as though the single side grind was respected. I would sharpen this knife one side at a time.
