Timm, I have two Bunka knives. they both are sharp in the tip. Here’s a website you can look at that selection. All the models are sharp at the tip.

Some of us are using this scope holder accessory with the Pluggable Scope. It takes all the focusing issues/problems away. Now, where I set it, it stays until I choose to re-adjust the focus ring. This scope accessory was devised for hand-held scope use.

The style is Wa Bunka. It’s a nice enjoyable style to use. It’s a cross between a Gyuto, chef’s knife, and a Santoku, multipurpose knife.
Ed K’s wife may be able to read the Kanji to help identify the brand.

Magnets seem like a good idea but they do not fare well once they start collecting fine steel dust from knife sharpening. Especially if the magnet(s) are strong enough to hold well and stay where placed. I found the very fine steel dust piles on the magnets and grows like a steel furr ball. That boning knife isn’t that big and the blade looks mostly flat in the blade center. I think I would have clamped it so the center flat portion is centered with the jaw and the blade was mostly parallel to the jaw line, with it high up in the jaws so it’s clamped by just the tips of the jaws . If you take a close up of the writing my wife might be able to decipher. When we enlarge the pic, it blurs out.
The first 3 characters appear to be Katakana and we can’t make out the following Kanji characters.

For loose abrasives that haven’t come free yet, I’d use a dry nylon scrub brush and a shop vac or compressed air. The pronounced shedding will stop soon as the stones get better broken in.

Scratches are commonly seen with new systems. Several issues can contribute to them. First, newer stones just getting broken in tend to shed loose abrasives with use. Ken both the Commercial Series and the Gen 3 Pro use the same vise and similar mechanics for the angle adjustments. About the only differences between the two models are:

An alternate method would be to place a shim of sorts between the knife handle and the Tormek holder on the right side of the knife handle in order to shift the knife blade back to the left as the holder centers the widened handle. A wooden paint stirring stick might work well for the shim.

Edge leading strokes are done by bringing the stones down and onto, or down and against the knife edge. Apex down to bevel shoulder.
Edge trailing strokes are done by raising the stones up and then off the knife edge, or up and away. Bevel shoulder up to the apex then off the edge.

I recommend you should always start with wide angles. This creates a short height bevel. The sharpness is a factor of how smooth the bevels are and how closely and precisely the two bevels intersect, the keeness. Edge keeness translates to sharpness. Sheffield steel is high carbon steel. Timm, before you can sharpen a narrow or short height knife like this one you first have to find a secure method to clamp it in the W.E. vise. Otherwise, your sharpening stones will contact the vise and not allow the stones to reach the apex.
