If you feel it’s prudent to always wear a dust mask, while you are sharpening, I wouldn’t argue that point. Better safe then sorry.
I measure the angle after I match it as determined by removing the sharpie ink, so I know what this bevel angle actually is. Then I can record that angle in my sharpening log, along with the knives positions det…[Read more]

000Robert, there are really not any definite do’s or definite don’ts when sharpening with theWicked Edge. Other then…don’t let your fingers dangle across a sharp exposed knife edge! Find what you like and what gives you the results you seek and put those practices together to develop you’re own, individual “sharpening technique”. Be open to…[Read more]

You can buy the indicators, (they’re called “stone stops”) from forum member “airscapes”. Just click his screen name in blue a few posts up in this thread to private message him.

JayGrin, I can’t speak for that particular knife. I can share, in general, you don’t have to position and clamp a knife so it always rests down on both pins or even just one of the pins of the depth key. The depth key is simply used as a positioning guide. What matters is simply that the knife is held securely. Sometimes I make use, all…[Read more]

rummels, most of the digital microscopes that are iOS compatible are wireless connected. Some have a wireless receiver or adapter box that plugs into the USB port of the iOS device. Other scopes connect to your home wireless network then you use them through your home network wireless connection. Most of these iOS compatible scopes I’ve seen d…[Read more]

There are also the old version stones with black centered handles and the newer style bi-colored handles. The newer bi-colored stones have a better/tighter fit on the guide rods for better precision and less slop.

CSB, We never did get any answer from Wusthof we trusted. I learned to use the sharpie marker method to match the existing bevels…if they are still original. (See post pasted at the top of this page for help doing that). If the bevels have been changed, (i.e., re-profiled), with some sharpening method or an attempt to, then I would recommend…[Read more]

You have everything you need, and more, except experience. With practice and broken-in sharpening stones you will get Wicked sharp edges.

The other way to look at is…now that you know that finger hold position and pressure effects how the stone scratches the bevel. Study the resulting scratch patterns of these different finger positions with a magnified visual aid. Then use this knowledge to steer where you place your scratches. By understanding this cause and effect you can us…[Read more]

Stark sharp, welcome. It’s not hard to use a Wicked Edge, but it’s far from simple, either. It takes quite a bit of practice to learn to use it well. The is a pretty good break-in period to the sharpening stones before they start to come around a yield consistent results. This takes most of us 8 or 10 knives worth of practice. Always put safe…[Read more]

Don’t over complicate. If you don’t see the results you want in the place on the bevel you want them, whatever the stroke and whatever the medium, adjust your position and pressure to achieve the appearing results you desire, where you want them. Our technique needs to be flexible. This is results driven. Do what it takes to achieve the resu…[Read more]

I will take another try at this….
If your knife is clamped securely and steadfastly. Then the bevels on either side of the knife edge do not move either.
The scratch patterns are imparted onto the bevels by the moving stone, (what ever sharpening medium it is), which is held in your fingertips, as you direct it’s movement across the…[Read more]

There is no wrong. The key is making what you do, work for you. That’s all that matters. If you can get good sharp results you’re doing it right. Now from there, you can experiment with tweaks and changes to improve your results, to be even more so, to your liking.
Down the road in your sharpening journey you may decide to invest in an obj…[Read more]

There’s always “one other thing”… this is why those of us that have figured it out and have learned to use our Wicked Edge Sharpeners well share the same bit of advice, consistency is key. Once you figure out how to use and control your scratch patterns to your benefit then you begin to realize how consistent finger/hand-hold position and p…[Read more]

In one of the many emails I exchanged with -Terry, I suggested to him to become a better sharpener I found it helpful to become a student. I used the USB microscope to observe my scratch patterns and correlate the placement of the scratches or the position the scratches are laid down on the knife edge bevels with the different finger positions…[Read more]
