Leo you set your angles making gross adjustments first then microfine adjustments to fine tune your sharpeners angle settings to read the desired angle with your angle cube. Not the opposite way. Don’t use the sharpeners settings to set your desired precise angle settings.

I rely on visual inspection with a USB microscope in conjunction with finger feel for the burr and edge sharpness. I also test each grit edge for sharpening progression by pulling a piece of newspaper down across the clamped knives edges. I don’t share that experience. For me the burr forms quickly and easily with little effort, once the initial burr is created with my beginning coarsest grit. As I progress through the finer and finer grits the burr forms quicker and easier with each subsequent finer grit.

A burr is the direct result of exercising good proper sharpening technique well enough and long enough.

Many of us use our angle cubes to make angle readings to double check and re-adjust our sharpening stone angle settings, each and every grit change. I’m of the belief to have a knife sharpener that allows this level of repeatable precision to take advantage of this ability.

Yes. Zero your cube only once at the beginning of your sharpening session. The cube will read consistently as long as the W.E. sharpener sits on a stable steady surface and has not been moved or shifted.

Looks good. Two differences, the BESS device does capture and reflect the reading at the breaking point. Also the BESS has been tested and calibrated to the test filaments they use.
Your’s will certainly give you an indication of relative sharpness. Good job. You get an “A” for ingenuity.

Just use them regularly as you would use the diamond stones. I can’t give you a timeline. I just can share that they took longer to break in then I expected. Glen, just so you know, the ceramic stones are used just like the diamond stones, except they have a long break-in period. They seem to have a coating on the stones from the high heat manufacturing process. They do require some amount of use and wear to remove this coating and to get the best results out of them.
