Like your guide, mine behaves similarly. It does hang on the depth key pins and feels sloppy, when the vice is open. Which particular Model System do you have. From the questions you’re asking and the wording I’m guessing you started with what is now the WE120 and upgraded that to the WE130 with the 1st released Gen 3 Vice, (no split vice and no tension adjustment). I would suggest you continue to sharpen the knife as usual. The chip will get removes with a couple of regular sharpening sessions. I wouldn’t waste the knife steel trying to remove the chip all in the first sharpening.

jayhwer01: I am a fan of Shapton Pro stones, mounted on Wicked Edge paddles. I enjoy using them. I think they are great. They are a true splash and go stones. Oil’s used with very fine grit Arkansas Stones. It may just work well with the diamond lapping film?? You won’t know till you try. As long as the oil doesn’t deteriorate the films psa and cause it to lift off the platens.

Jacob, IMO the aluminum oxide and silicon carbide or silicon dioxide lapping films don’t cut or work as easily and efficiently as more expensive diamond lapping films. Also, I don’t think you need to employ a film more coarse grit than 6µ or 9µ. Anything more coarse you should have covered with your WE diamond stones. Also be careful what you’…[Read more]

On the other side, different sized and different shaped or styled knives will help you to learn a variety of skills as you undertake different challenges presented while attempting to sharpen these different knives as you learn your technique. It’ll certainly make you a more rounded and more experienced sharpener with a broader skill set.

If you’re more likely to sharpen even bevels and symmetrical grinds, and do some convex bevels, the quicker and simpler to use Gen 3 Pro is the way to go.

Just to interject here, Ian, this difference is in theory based on stats and is on paper. To put it into practice would be challenging.
