I agree with Marc, you can get a lot lower angle by simply moving the knife higher in the vice. I sharpened a paring knife yesterday and had it clamped down about 1/4″ from the top, worked great.

This is what I did with the extra nuts that Ed sent out with my shipment, I stuck them on the end of the outer knob. Then I snugged them both down using a couple of wrenches. I know I’m compromising stone angle by the nut width but I feel like it locks the entire assembly down tight. Three weeks now and zero incidents of loose hardware.

Does anyone use water on their diamond stones throughout the sharpening process like I do? I developed that habit coming off the EdgePro system because with it and the stones being used, if you’re not soaking them in water, you’re applying water to them during the entire process so I stuck with that except I don’t soak the diamond one’s first. Along the same subject, I have a heck of a time getting small knives with no vertical surface centered. So I think all I have to do is stick the angle cube on both and match the angles by shimming it but then there’s not enough knife blade for the magnet to clamp down on. LOL!

I find that as I stack up several pieces of blue painter’s tape on the knife for either protecting it from being damaged or using it as a shim, the vice has so much clamping ability that it squeezes the tape badly because it’s not as dense as it needs to be. Does chamois rectify this issue? If so, I’m headed to O’Reilly right now!

Sure, it all depends on what techniques you use and what your goals are. After I achieve a burr on both edges of the knife, I personally give it a few strokes and then run a Sharpie down both bevels. I watched a bunch of YouTube videos before buying my Gen 3 and was totally mislead by the guidance provided. These guys with these hard and fast rulesets they’ve come up with are totally wrong. You can’t just say ‘I’m going to give each side 50 strokes and move onto the next stone’.

Well, I knew I was going to screw that explanation up somehow and glad you caught it. I was looking for a way of explaining that the higher the blade was above the vice, the farther out the rods must be adjusted to. Good geometry refresher though!
