There can be different goals when sharpening for a business. This needs to be decided and defined up front.
Are you offering your sharpening services simply to produce a sharpened knife for utility sake, as Kyle has described he’s doing.
Or, are your sharpening services like those of Josh of Razor Edge Knives.

Here is what I wrote earlier in this same thread to answer Kenneth’s same question:
For me the finest grit stone that’ll get the reprofile job is often only the 400 grit. Sometimes I’ll need to go all the way down to the 100 grit. I have owned the 50/80 grit pair for a year or two now and needed to use them twice.

Simple Green is not recommended. This cleaner has been reported by W.E. users to dissolve and loosen the adhesive used to attach the sharpening stones to the plastic paddles.

It takes a good amount of practice to figure out how to use the W.E. well. Maybe a good 10 knives or more. It’s not hard to use the Gen 3 Pro, but it’s not simple either. It also takes 8 or 10 knives worth of sharpening to just begin to get your sharpening stones broken in to where they’ll begin to yield good consistent results.

No. Lapping films are just an ultrafine diamond sharpening stone. It’s best to use them in an edge following stroke, that is up and off the knife edge. This is the the same stroke used with the strops.

The Gen 3 Pro comes standard with 8″ guide rods. You may want a longer optional guide rod. ( at least 12″).
You’ll certainly need these for when you’re able to purchase the low angle adapter

Rodger, I use edge-leading strokes with every knife I sharpen. Please exercise care with edge leading strokes. It’s very easy to catch a dangling finger with the exposed sharpened knife edge as you bring the stones down and into the knife edge.

Welcome to the Wicked Edge Forum Scott. The Wicked Edge is a precision sharpening system….hence WEPS. It is not a quick sharpening system, or a simple system. It’s not designed with the “lazy man” knife sharpener in mind.

All of those six knives top to bottom except for the third knife down appear to be serrated edged knives. I don’t like to sharpen serrated knives since it requires totally removing the serrations. I believe they were made originally as serrated knives for a reason. Maybe that steel just works better with serrations.

Google “Knife Grinds”. There are quite a few different grinds. I have determined what I’m working with, when I didn’t know, by comparing the knife with those images I found from Google. The strop cover will work with the diamond stones and ceramics as they have similar dimensions. “airscapes” does make a deeper cover to be used with the thicker whetstones some of us use.
