The Gen 3 Vice showed in the file I attached is off a WE130 model. I don’t know if that has anything to do with the number of stacked pairs of belleville washers. In the same scope of discussion as “Organic ” presents I also think besides steel dependence we also have the sharpening medium to consider. For those harder more chip prone steels I find the whetstone sharpening mediums more effective to sharpen these steels. Pat, yes that is a shortcoming of the Gen 3 Pro model. A work- around that may help is accessorize with a micro-angle adjuster mod offered by Ed K, forum member “NotSharpEnuff”. Michael, after doing a little reading up on the web what makes a good cheese knife, nothing indicates sharpness as a needed quality. A scrubbing stroke is the first stroke I utilize with each grit I use in my sharpening regimen. I have not experienced any downside in using it.

Very long knives, like your machette example, may be too long to sharpen them all at once and may need to be repositioned and sharpened in sections. I think a good approximation of the overall length that you can reach efficiently with the W.E. is 1-1/2 × the guide rod length. The soft more compressible nature of the strops and since the abrasive compound is simply applied to the surfaces and not permanently adhered contributes to the difference in the polishing behavior of strops vs the sharpening behavior of the lapping films. Kris, to be sure you purchase the correct diameter guide rods to match your particular version WE100, I suggest you stick with W.E. for that particular accessory. You probably should order them via a phone call to be sure you get what you need.

IMO it is more about your technique. I believe, by trying to follow the length of the knife as it curves down at the tip there is the inadvertent tendency to pull the strop down and onto the knife edge while doing that.
