Welcome Todd, consistency is the number one. Finger hold position and applied pressure on the stones are key. It’s not like that. Each better model, a higher model number is a more expensive investment because it easier to use it well.. Each W.E. sharpener in the product line all do the same thing, sharpening knives. The more expensive models are easier to learn how to sharpen knives well. I find I get good sharpening results using W. E. whetstones when attempting to sharpen very hard and chip prone steels.

When I sharpen my single bevel Japanese knives I use the W.E. stone hand-held, not on the guide rod, to debur the flat side of the clamped knife. This gives you the stone control needed for that situation.

These newer and newer steels alloys are being devised. Their extreme hardness does present sharpening challenges. I don’t think the issue is with the sharpener used. You can elevate the vise by installing a “riser block” between the vise and the blue base plate where it mounts. This will allow you to achieve lower angle settings before the stones impact the jaws. You may need longer guide rods with the riser block.
