There are a lot of factors that determine the price of a knife. Blade steel is one of them, but isn’t the be all determiner of quality or function. That looks like it would be a fine knife. It might be a bit overpriced for a VG-10 blade. If you’re thinking VG-10 is the way you want to go you can get a Yaxell Mon 210mm for about $80. I would guess use habits are the cause of the edge always rolling one direction. Unfortunately, knives that get used will dull either from rolling, chipping, or just general rounding of the apex from wear. That does look suspect. I’m particularly wary of the “ships from China” bit because all WE products are made in the USA these days. I don’t know why anyone would legitimately sell for such a low price since it would be at a loss. I’d pass on that.

Stropping is the only stage of the sharpening process where what I would consider “rounding” to be a potential issue. If you don’t have the angle sufficiently matched as you progress through the grits you can miss the apex and end up with an edge that doesn’t preform as well as it should. Yes, but you’ll probably need to work one side at a time while holding the handle to stabilize the flexible blade. There are after market modifications that you can rig up that will also help eliminate the blade flex on this type of knife.

Well, you can use too much pressure. When this happens you will roll the edge. I find that it makes it a lot easier to prevent edge rolling with a 1.5 degree per side reduction in angle and the use of firm pressure. I judge the results based on increase in sharpness, not on appearance.

The solution is more pressure on the strops. The more you reduce the angle, the more pressure you have to use to compress the leather such that you reach the apex. If you have a really light touch try using the same angle as you sharpened at.

Strops are very pressure sensitive. The amount of pressure applied is highly user dependent, so each user has to experiment with angle adjustments and pressure to figure out what combination works for that person.

The answer is that it is a matter of personal preference. I prefer to reduce the angle by 1.5 degrees per side so that the leather just barely hits the apex. Increasing the angle will give you a convexed apex which will probably feel a little less sharp but might have good edge retention. The break in is a dramatic difference that you will be able to see when it has happened. I first noticed it on knife number 7. The stones have gradually improved from that point as well, but that was when it jumped out at me the most.
I would expect a 1000 grit edge stropped with only one pair of strops to be shinny, but frosty looking and not a mirror.

The paddles have been updated in appearance and manufacturing consistentcy, but the stones are the same. These will go well after your 1000 grit diamond stones. If you’re after a prettier edge then you should get some diamond lapping film to use before the strops.
