I use each grit in my sharpening progressions the same. The same stroke routine, again and again. Just by the nature of my repetitive technique I apex the edges on both sides and form burrs with each stone pair. It’s not intentional, just the result of my consistent technique.

Electric belt sander/grinder. The paddle plastic does melt so you may have to clean up the remnants with a sharp edge.

I use a scrubbing stroke as the beginning sharpening stroke with each and every grit I’m employing in my sharpening progressions. I keep this scrubbing stroke moving so the stone is never positioned too long in any one place along the knife edge. There are two ways to tackle this issue. Both require a little mechanical ingenuity.

Todd, it appears to me you are scrubbing over the top of the thumb stud that sticks out on the right side, as the knife is mounted in the W.E. vise. It appears to me that the top surface of the stud is showing signs of stone wear and contact. My preference is to use whetstones (mounted on W.E. paddles) for any knives made from steels that are HRc 60 or harder. That’s not to say you can’t use the diamond stones on some harder steels. If the steak knives have never been sharpened before you’re left to believe the angle you found using the sharpie method is an indication of the original existing bevel angle. That’s an older model Commercial Series Sharpener. It has since been redesigned and updated with the newer version Gen 3 vise system. I think you’ll be better served to take your questions directly to Wicked Edge. There’s been no conversation on this forum around that model in my years of participation.

I should have said, a 25º bevel on a fairly narrow width or thin bladed knife can appear very small. The wide angle is shorter appearing than the narrow angle bevel, on the same knife blade. You may find it easier to see a red or blue ink sharpie marked bevel. (I usually recommend the black sharpie because many people already own that sort of marker.)
