My Shun Premier set that I bought off Ebay was probably a return and were dulled by whoever had used them before me. Even though the seller represented the set as “new in box”! I’m not a fan of serrated blades and the only one I had (and old Wusthof) I re-purposed into a straight edge utility knife that now slices through “any” bread very easily a lot easier than the serrated one ever did.

Thanks Organic for that tip. I’ll try looking through my digital microscope and see if a few swipes of the ceramic is developing a secondary bevel (which I’m sure it does). Thats a good idea Organic. Using the sharpie which I do . . . but moving the micro adjusters a bit the reach the faint trace of sharpie on the edge of the apex is a great idea. I know how you feel. I was surprised how open my first vice on the Gen 3 Pro was. I too wondered how WE could produce such a precision instrument yet leave the cam open to diamond geit and metal filings. With my kitchen knives I tend to drop back to 800 and go up through the 1500 grit. First time I reprofile a kitchen knife though I do go through my normal grit progression right up through stropping as I like all my knives to have a showy mirrored edge. I’m just guessing here, but since its a kitchen knife I’m guessing by the scratch pattern you stopped at 1,000 grit. Maybe 1,500. What say you Readheads?

Thanks Marc. So far I’ve only done 2 knives from a new profile. I did find a little slippage from the large knurled knobs while going through the various grits. So I continued to use the white plastic screws to hold the adjusters in place as a double safe against slippage. I just got a new knife in yesterday that I’ll need to reprofile it so I…[Read more]

I also used to use a large kitchen knife to scoop or scrape cutup food to put in a bowl or a plate. I also figured I might be dulling or rolling the knife edge using the knife as a food scraper.

Welcome Samuel! I converted one of my closets into my workshop. I removed the shelves from my Gen 3 Pro and use it on top of two Crafstman tool boxes which puts it at a comfortable height for the WE arm motions. Like Organic, I’ve always sharpened standing up. One of the tool box drawers was a perfect size to hold all the WE accessories.
