Brewbear you are on the money as to how dangerous our knives can be when we take for granted how sharp they really are. Here is another thought. I can keep my sharp knives tip down and the one’s that need an re-fresh I can store tip up on the magnetic strip!
This way I’m always reaching for a super sharp edge.

Thanks Marc for the M.O.C. link. I had trouble getting it to open. But I was able to go to their home site with google. I’m checking their reviews on Amazon if they still sell them. A few comments on their home site said the wood scratches easily. Maybe the walnut shows scratches but I’m looking at their oak.

Thanks for the to comments. Yes, I was also concerned that the metal would scratch up my knives. I searched through the reviews on Amazon and I could not find that question being asked. I’d like to free up some much needed counter space and not use the two wooden blocks I store my knives in for many many years now. Besides keeping my knives at an easy reach these magnetic strips would also show off my knives and add a nice aesthetic touch to my kitchen.

TC thanks for posting that vid you made years ago. I found the same imperfections in the steel from collectors I own in even in the $750-1000 cost range.
Was the tip of the knife in your vid designed like that or just a poor grind?

Thanks for your comments Readheads. Not all of us can afford $400+ for each Japanese knife or a set of higher quality set of Japanese kitchen knives. I’m sure there are great knives available with good steel for a reasonable cost, but I would think more often you get easily hosed with the unknown or off brands if they are lower cost.

So I dropped back to the 800’s and progressed from there refreshing a japanese global kitchen knife. Stopped at 1500 just to give it a mirror as I only need a working edge for kitchen use. My friend just received a Shun VG10 Damascus (model Premier) 3 knife starter set. He has the Bess tester too. I asked him to test the factory edge sharpness out of the box for the hell of it.
His numbers were 8 inch Chef = 225, 6.5 Utility = 320, Small Parer = 385

Go with the 130 and no lower. If you buy one used make sure it has their upgraded vice. If money is an issue make it up on adding on used accessories when you come across them. I see used stuff on the edge snobs forum on Facebook go by from time to time (good forum).

You have put into the blade a “recurve” near the bolster which renders IMO the knife useless as a good performing kitchen knife because it can’t cut food down to the board in that area.
