The AMK-75 runs at 1000 RPM’s on the low side I believe. If I buy a powered sharpener I think that’s the one for me.

Hey Josh, you have to clamp the knife right up against the handle, and deep enough to get on the flattest spot. You can tilt the knife tip up just slightly, 1/4″ or less, to compensate for clamping it at the back of blade.

I think you will find that advertised angles by manufacturers are generally speaking not very accurate. I have purchased identical knives at the same time and sharpened them, they both had completely different profiles and most “new” knife edges are all over the place and not very good until you get into the high end knives.

Scrubbing is best when done random and in different directions. The object when scrubbing is metal removal PERIOD! Edge leading strokes are when the stone is cutting into the edge and edge trailing strokes are the stone cutting away from the edge. Clamped…up is trailing and down is leading.

Could not disagree more! Absolutely the hardest knives to sharpen have been the cheap knives in my experience. Some of them do sharpen easily but for the most part they drive me nuts. Of the powered sharpener that I have seen this one looks like it may very well be the best. Cost is $650.

Justin I hope you are healing up now for the most part and I’m glad you are looking at this to find what works for you. Even if someone is an experienced sharpener it’s a good idea to take every precaution that we can. My granite base is 10″ deep and 12″ wide and weighs about 15 pds. so maybe that will give you a little reference. I wouldn’t want it to deep if you set close to the sharpener but the width is where most of the stability comes from and you can make it as wide as you have room for, but you have to determine that for yourself I guess.

As far as recommendations for you go L, it looks like you have all the diamonds, lapping films, now ceramics and adding the LAA will allow for very low angles. I think I would spent some time getting to know the system and new mediums you are being introduced to. Spend some time to get to know each other so to speak.

Welcome Paul,
Just a suggestion Paul, if you are using a lighter material for your base just increase the size of it a bit and I don’t think it will be a problem. Increasing the size will help with stability while adding a bit of weight as well.

Use It!!! The best test is real life use in my mind. Unfortunately this is time consuming without instant gratification.

I wanted to tell you water is not a problem for the WE. I take it apart and spray mine in the kitchen sink all the time and have not had any issues. I also have shapton pro stones and don’t make much of a mess at all with them. Like MarcH stated they only require a little water as the stones don’t soak anything up like chosera’s or arkansas stones…[Read more]

Hello L, good initial review! I’m sorry you broke a platen already but it sounds like you are getting your feet wet. Don’t expect to much for 8 or 10 knives buddy.
