This one looks right. Some people grind the bolster off with a spindle sander, like a big choil, which is fine if you like bolsterless knives. However it changes the feel substantially and those not accustomed to bolsterless knives may cut themselves.

Perhaps these are included angles of a secondary bevel upon which a small or micro apex bevel is formed? That would make sense for machine sharpened knives I think, as in videos I’ve seen there is usually a edge grinding operation, then final sharpening is done separately.
By edge grinding I mean things like this.

The chart has been updated to revision 9. This is a particularly large revision and I welcome comments. Significantly I identified and corrected the error of listing “CAMI” and “ANSI” separately. A lot of reviews on Amazon are totally fake, unfortunately. You can try to filter out some of these using Fakespot.com but I don’t trust that entirely either.

This is bad technique. You should not be making a bow like that as you sharpen. Likely your 1998 set could be restored to working order with a little work. Indeed it is quite complicated, which is why I have spent a great deal of time creating the GLGC in an effort to demystify these things.
I think it unwise to conflate grit and mesh, since there are many different definitions for both grit and mesh, none of which are equivalent IIRC.
