I use my 15yo Wusthof Serrated Bread Knife all the time. It’s one of those specialty knives helpful to have in the kitchen. IMO, your knife had clearly evident and restorable serrations all down the blade. A few minutes of effort with a small round file or small round ceramic rod would have done wonders to renew that knife.

Gene, the hard part of sharpening folding knives like that one is the limited amount of flat clamping surface you have to position and clamp the knife for sharpening. Then you may have a thumb stud to contend with that may limit that clamping room also. It appears to have a sharpening choil so that’s helpful.

Roy, first, a truly “scratch free” mirror polish is almost impossible. Especially if you don’t invest hundreds of dollars in the necessary abrasives, polishing mediums and accessory tools. I’ve only seen maybe two knives in my few years at this, that may have been polished that well. I never saw those bevels up close or magnified.

Jon J, That vise/setup in expidia’s case is the Gen 3 Pro. It is not the WE120, (in the Pro Pack II), upgraded with the Gen 3 vise, like you said you have.

Brewbear, there are several different abrasives used in lapping films. If it’s not distinguishable what their selling don’t buy it. Some sellers simply call it lapping film.

Roy, I use the angle cube to read the guide rod angles and micro-adjust them as needed with each and every grit change. So I start each new grit back at the same sharpening angle I stared the knife at. Not everyone does this. I prefer to do it this way.

The purpose of using the 100 grit is to remove steel when profiling a new bevel angle. If you find your removing too much steel then go up a grit, or two. Roy, it may be possible that your sharpening took away enough steel that your after sharpening readings were about 0.5 degrees more since the edge is now essentially lower. Mike , it may work the opposite for you. Maybe you have more control with your left hand side and right hand side pushes heavy. Mike, anything you can find at your hardware store that will slide down onto your guide rods but stay in place are stone stops. I found rubber washers at Home Depot on the plumbing aisle in a faucet repair kit. Cheap and effective.

Have you disassembled and removed the square angle bar and put a straight edge across it’s full length to verify that it is bent? Maybe use a level or carpenter’s square.
