Simon, are you positioning the LAA so it is all the way down between the jaws so the adapter is physically contacting and resting on the top horizontal surface of the jaws. Also the vertical sides of my LAA are close or in contact with the vertical sides of the jaw set.

I use alternating side edge leading strokes as my last sharpening strokes with each grit I use in my sharpening progression. That is left side-right side-left-right strokes that are down and onto to the knife edge. This removes any formed burr and exposes the sharpness you applied with each grit stone you use.

I ran into this same dilemma sharpening my Wusthof knives when I first started using my first W.E. sharpener. I went so far as contacting the Wusthof technical services directly for clarification. Based on my personal experience sharpening my own Wusthof knives 17° per side is a good balanced angle for sharpness, keeness and edge durability and longevity.

I did not misconstrue your post thinking you were meaning, directing to, or talking about me.
What I take exception with is your use of “most people”. I think the issue described of damaged edge steel as the result of bad heat treatment or overheated edge grinds is far less common then you’re choice of words suggests it to be.

I use alternating side scrubbing strokes, as the first sharpening strokes, with each and every grit sharpening mediums, on every knife I sharpen or touch up. The aggressiveness I use and the amount of steel I remove is intentional and is determined by my applied pressure and the force employed with the scrubbing strokes against the knife edge. …[Read more]

Couple things to look at:
Are your stones broken in yet? It takes a minimum of ten knives to just get them started on the way. Are you using each grit long enough. Longer is better then not long enough. You can not over do it.
