Don’t know if you have an iPhone. If you do i use an app called Tap Forms, it is a customizable database that you can use for recording a sharpening session. There might be apps for Android also. Here is what mine looks like from a previous thread

Sorry, did not mean to imply that German steel was inferior. I have Messermeister and love em. I chose to sharpen mine at 18 deg, micro at 20 . Blade seems to hold up much better for me now. Except when wife tries using chefs knife as a pizza cutter on stone Ugh! There went a lot of sharpening for naught.

I think 14 Deg for a German steel knife is to acute of an angle. Wusthof site says they use X50CrMo14 at 56 HRC.
I think that steel would perform better, last longer at a higher angle.
If it was me i would sharpen at 18 or 20 Deg, then put a micro bevel at 20-22 Deg.
Just my opinion.

I used plastic caps off of small spray bottles to put the magnets in, then used tape over open end. Easy to remove tape, metal filings.

Great choice on your selection of sharpeners! I think though when you get the Gen 3 Pro you will be spoiled by how easy it is to change the angle of sharpening, over the PP3 sharpener (WE 130). Have fun!

I have the EP Pro model, WE Gen 3 Pro. The WE is my go to first choice for sharpening. I did change out the standard 8″ rods with the 10″ rods.
Enjoy your sharpening adventure on the WE, it is awesome!

When i purchased my Gen 3 Pro i also got the 10″, 12″ rods. I personally think the included 8″ rods are too short and the 10″ rods should be the standard set.

Gazillion,
I have Gen 3 Pro also, Chicago Cutlery Chefs knife. Attached are my settings. IMO this knife will not support an angle that acute. I once tried at 18 deg, blade chipped very easily i now sharpen at 22 deg.

To me it looks like the Scope lens protrudes from the end, that would not be good for running the scope along the knifes edge. Have you thought about a Tablet for a USB scope. I use an old laptop for my Veho.

I have done 22 deg, 24 deg for different Deer hunters skinning knives. Some like the 22 deg bevel, others wanted the wider 24 deg bevel both seemed to work for each individual

I believe i would break the new hones in on some old beater knives before i went to one of my good knives. Just to wear the diamonds down because brand new they will leave deep scratches, plus practice to get technique down. If you dont have any cheap knives to practice on go to a Dollar store and you can find plenty. Good luck…[Read more]

I’ve always used my highest grit hones {.6u ceramics) to match existing angle with a sharpie. I think 100 is grit too coarse a hone to use to find existing angle. But let others more experienced chime in to see what they say.

I used to use the iGaging angle cube, went to a model just below what MarcH uses and i love it. Much more accurate just takes a couple seconds longer to settle out. The DXL360 here is a Link

I agree with Justin. You could buy the WE130 sharpener, add the 8001000, 1500blank glass, AAG. The base would be nice but many have made a base out of bamboo cutting boards. I think you would be much happier with the WE130 vise. You could call and see if you could get a pkg deal for a little price break, worth a try. Just my 2…[Read more]

Finally had some free time to continue the break in of new Diamond hones on my new Gen 3 Pro sharpener. My wife had some cheap (“Stainless Steel England”, stamped on the blade ) knives that she keeps in a drawer. Progression was 100-1500 Diamonds.
