Use tape to protect the handle if you care about keeping it scratch free. Check it frequently. Take your time. It’s a lot of edge to deal with, in particular if you care about scratch marks. Personally, if you plan to do a lot of push cutting, keep the same alignment. Unless you are going all out and plan to polish it. Then go nuts. Share some pics after!

I don’t think this is a convex edge. The knife was ground down on a slack belt by the looks of it, then a standard edge was applied.
When you see a true convex edge, it is curved right to the apex.
I wouldn’t treat this knife any different than any other standard knife. As I’ve mentioned to expect before, the bevel varies greatly, doesn’t matter…[Read more]

Marc is right, but quick answer. I use Diamond to 1500, diamond lapping films in 6, 3, 1.5 micron. Leather strops in 4/2 & 1/0.5 micron emulsion. I have recently bought this complete progression new replacing my previous progression, Diamond to 1000, Super fine and micro fine ceramic, then leather strops with 1/0.5 micron paste, so have not broken…[Read more]

If you go diamond to 1500, you will have a very sharp edge. You can use the ceramic, but they will need a lot more breaking in than the diamond. I would suggest you use Ceramic after diamond, and expect it will need to be broken in. Personally, I never really enjoyed the ceramics, and they never got enough use to break them in, I had both super…[Read more]

Convex edges are usually applied by a slack belt, and maintained with leather. If you want to use leather on the WE, that will work but will be a lot of strokes. Strop progression.
Or put stones to it and profile it with a flat edge.

Thanks very much, it is healing up well.
I also ordered a set of shields, but wanted to note gloves here as I was not actually sharpening the knife when I was cut, I guess because at that point I am generally more aware of what I am doing, so shields wouldn’t have helped. And the level of sharpness one can achieve with the WE, in particular with…[Read more]

Great pics, and glad to see you put a knife through the paces.
Question for you, do you plan to measure your bevels and compare against the model now? I wonder what level of accuracy you will reach compared to your expectation!
Keep in mind, while you mention operator error, part of the charm of this system is it takes a lot of that out. That…[Read more]

graphite, I don’t think there is anything fundamentally wrong with how you are interpreting the model.
I have watched the video of the Chef’s knife, and paused it, moving it backward and forward to see how all the lines and different calibration points change and been slightly skeptical of the heel section myself, as my knives often end up a lot…[Read more]

Readheads,
Don’t get me wrong, I am looking for a microscope, some I’m pondering in the $850-$1250 range to be able to do a better job at sharpening. I totally understand where you are coming from, the folders I have are all high end.
I was more speaking to getting too theoretical about a tiny difference that may or may not be present in reality…[Read more]

I don’t want to sound pompous (I’m really not), but looking through tons and tons of stuff over time on YouTube etc, there is SO much variance between people’s hand placements between their stroke, individual strokes, stroke differences between arms, likely stone thicknesses, wear on the stones, how many people aren’t properly setting the arms…[Read more]

Justin Fournier replied to the topic Do you test sharpness while still in the vise? in the forum Basic Techniques and Sharpening Strategies 6 years, 11 months ago
Lots of people prefer a toothy edge as a working edge, some people like that at 600, others at 1000 depending on steel and cutting application. Those little teeth work well for some things as perhaps your foam is showing. In the folder world a common edge is a toothy mirror polish, which is a lite stropping to bring out some shine on the edge…[Read more]

So I’ve been using the WE for a few years now. During that time I was never cut by a knife on the clamp and have become very comfortable with the hand motions while using the system. Recently I changed my system and I think that contributed to my first bite.
What happened was, I use my pointer finger as a reference point on the right arm, and…[Read more]

Every time someone goes over something that has been discussed before, there is the chance that they will find another perspective and bring something that had been previously overlooked. So I’m happy to see it revisited.
Personally, I haven’t experimented with the circle jig much (I made a cardboard one for my old system a long time ago), as…[Read more]

I can’t locate it, but several years ago, maybe 2013 there was a long discussion over this concept. It was on a YouTube video, someone made the concentric circles on cardboard. I can picture it clearly, but can’t find it.
Anyways, what most of us found at the time is that getting the tip in a spot perfect for it left the heel too far out, so 2…[Read more]

I’m also slowly researching them as well, my starting point is the model Graphite bought. My current task is identifying what features I would see as necessary and if they come in other models.
That is the Dino-Lite Edge AM4815ZT

Thanks Guy. Marc I did the same thing as you with my first set of stone now a few years old. But I’m way more particular about everything to do with the system now than I was before.

Thanks Graphite. I was looking at one lower model than that, less dynamic range, and polarized. Would you be OK exchanging emails regarding it, don’t want to derail the forums.
