I work with the USB scope on high power so I look at a very small portion of the bevel, maybe only a 1/4″ width section and usually the full height of the bevel.  I prefer to view the bevel from the side, 90° to it.  Others users prefer to look straight down onto the edge or apex from above it

Simon, are you positioning the LAA so it is all the way down between the jaws so the adapter is physically contacting and resting on the top horizontal surface of the jaws.  Also the vertical sides of my LAA are close or in contact with the vertical sides of the jaw set.

I just completed, packed and sent off this 36 Post Step Tiered “Rack-It” to another new W.E. forum participant.  This model can be used just as well both sitting flat on a table top or hanging on the wall.

I use alternating side edge leading strokes as my last sharpening strokes with each grit I use in my sharpening progression.  That is left side-right side-left-right strokes that are down and onto to the knife edge.  This removes any formed burr and exposes the sharpness you applied with each grit stone you use.

Based on my personal experience sharpening my own Wusthof knives 17° per side is a good balanced angle for sharpness, keeness and edge durability and longevity.
