The black marks on the ceramic stones is steel residue. It can be removed with the super eraser.
Keep the ceramics dry.
In my opinion the the 0.6µ/1.4µ is the better set. I don’t think you need to use both.

From what you shared this’ll be your first time to sharpen this knife. That said I prefer to match the factory bevel angle. I like to believe that original edge profile was chosen to optimize the steel’s quality and character.

John, I have a large and diverse knife collection made from a variety of steels many different steel hardness. I have carbon steels, high carbon steels, stainless steels and super hard powdered tool steels. The hardness of my knives range from HRc 56-58 to HRc 67-68.

Be aware that edge trailing strokes may result in a very thin yet very sharp knife edge. Sometimes it’s an elongated wire edge. It starts out incredibly sharp but lacks durability and may fail before not too long.

Are you using a lighted magnified visual aid like a jeweler’s loupe. Or maybe a USB Microscope .
Being able to see your sharpening results are invaluable.

I use each grit in my sharpening progressions the same. The same stroke routine, again and again. Just by the nature of my repetitive technique I apex the edges on both sides and form burrs with each stone pair. It’s not intentional, just the result of my consistent technique.

Electric belt sander/grinder. The paddle plastic does melt so you may have to clean up the remnants with a sharp edge.

I use a scrubbing stroke as the beginning sharpening stroke with each and every grit I’m employing in my sharpening progressions. I keep this scrubbing stroke moving so the stone is never positioned too long in any one place along the knife edge. There are two ways to tackle this issue. Both require a little mechanical ingenuity.

Todd, it appears to me you are scrubbing over the top of the thumb stud that sticks out on the right side, as the knife is mounted in the W.E. vise. It appears to me that the top surface of the stud is showing signs of stone wear and contact.
