Hey Jacob,
I do utilize a micro bevel on most edges but not all. I do most of my maintenance with a steel for kitchen knives and use a strop every fourth or fifth steeling. Edcs I maintain mostly with strops on a WE or a hand strop but use the last stone used when sharpening every so often and strop after.

You are not sharpening until you reach the apex of the edge! Until that point you are re-profiling or just removing metal no matter what the angle. It takes longer to apex a blade at 13 deg. than it does at 20 deg. and the apex is much more fragile at 13 than 20 as well. I to have not experienced an edge that was what was advertised. I’ve done a couple sets of Zwilling/Henckels that were as close as any. Wusthof advertises 14 degs., 10 for Santoku and Z/H at 15 deg. and 10. The henckels were pretty close at between 16 to 18 deg. but the Santoku was around 15 degs. and not 10. 10 deg. is approaching…[Read more]

You are correct that the vise does clamp most knives without enough of an issue to worry about. I only brought this up so if you determine that the cause of the problem is blade lean that you know that you can correct for that. It’s more of an issue with the original style clamp.

The sharpie is the easiest and quickest visual feedback on what is actually happening between the blade and medium

Best advise Joseph, Settle in and get comfortable you will be there a while. LOL 2 mora’s were responsible for breaking in my first set of 50/80 grit stones. I’m guessing Tom but I think a PP2 with a gen 3 vise upgrade will be $849. About $734 for the 130, 800/1000 stones, paper stone base, and angle gauge and you still need a strop at least. I think you would be very happy with either arsenal to start with. Enough to create very sharp edges.

Looks to me like that edge was ground (sharpened with a belt sander) and then micro beveled. I would do exactly as MarcH suggested, mark the micro bevel, verify the angle and use a 1000 or 1500 stone and if it’s taking to long back up a grit until you get it where you want it then strop.
