Right now I sharpen 7 restaurant knives a week. those 14 knives I own, and are for a Diner 1/2 mile from my house.
I have sharpened knives for a local Ma & Pa Italian pizza place, sharpened one to 5 knives a week. I do not own those knives. that work added up to a year or year and 1/2 not continuous there were some breaks, also about 1/2 mile…[Read more]

The first set of Wicked Edge stones that wore out was my 50/80 grit.

If I want the tape to come off “easy” I have had Good luck with yellow “Frog Tape” paint Tape.
Masking Tape works fine if you do not leave it on to long.

I believe that if the leather is touching the apex while stropping.
The leather will have an “affect” on the edge.
The sideways “pressure” of leather can damage the edge.
I do not have good control of my hand pressure so I back off the angle, which will take longer to have the same sharpening affect.

I am not saying I have your right answer, but I am happy with 400 grit as my final Diamond stone and going to Kangaroo Leather strop, with just some leather conditioner to keep it from drying out, usually…[Read more]

I use Styrofoam ear plugs.
The ear plugs are to short just the way they are.So I stand one up on a cutting board, cut it down the middle but do not cut all the way so it folds open. Put it between the jaws sitting on the spring.

I used “weed Eater” line as the compressible material between the “Ball End Screw” and the “Locking or Snugging Screw” in the “L Bracket” of my Gen-3, 1/8″ long is about right.
MarkH is right after market adjusters eliminate the issue in my opinion.

I have needed to change the angle on my knives. I would not want those degrees stamped on the knife.
I do some times put a small scratch on the side of my blade to mark where the center of the vice should be. Then touch that spot with “Permanent Marker” so I can see it, when I put the knife in the vice.
The “Permanent Marker” comes off with Alcohol.

Try taking the threaded rod out of the L-Bracket and putting it back in the L-Bracket the other way. You know with the “Universal Joint and angle rod on the out side.
You might have to remove the L-Bracket to do this.
Move the handle all the way to the right, to 27 degrees, if you need to get to the bolt that holds the L-Bracket on.

I don’t know if dry lube will help but I can not see how it could hurt.
when I cleaned up my vice I used a worn out piece of “Diamond Film” that I had thrown away to smooth out those Contact points because The metal Was getting rough.

I have drilled two holes in two credit card-sized pieces of plastic. I then drew three straight lines, two of the lines parallel to each other going to the holes in the plastic. then I cut on all three drawn lines with a knife.
I now have two small “Safety Shields” that fit snugly on the lower end of “Sharpening Stone Handles”.

It is safer to move the sharpening stones “up” and “away”. I did my “Wicked Edge” sharpening this way for years.
But lately I have been try the “edge leading” method and I have found it very easy to get cut.
