I think the very smooth edge you get with the stropping progression may remove the toothiness or the bite the edge needs to cut the hairs. Instead you see the hair sliding across or bending around the super sharp polished knife edge.

BK, learn on junk knives. Hold off on your good stuff till after you have a better idea what you’re doing and after your sharpening stones have gotten broken-in. This can take 8 to knives before the stones are yielding better sharpening results.

I think it has more to do with I-95 on east coast FL goes to the NE USA and I-75 on W side FL goes N in US to the mid west.

That knife you’re inquiring about is a vintage carbon steel French Sabatier knife. It belonged to my father. It could be over 60 years old.
The bolster pommel, the tang and the blade are all forged from the same solid piece of steel. The guard has always been square, like that.

Realize thin, narrow, long and flexible filet knives present clamping and sharpening issues with the W.E. More so then stiffer bladed knives.

I usually start with 6µ then progress down only to 0.5µ, (no finer). Be aware to only use edge trailing, that is up and off the knife edge strokes. I find very light pressure works best for me. I agree with Organic… your new Gen 3 Pro looks just as it should. The newest models have a short threaded guide rod end with no jam nut. Mark, it’s hard to beat the diamond lapping films for producing a polished edge. A good effort with strops does help, maybe a 4 or 5 grit strop progression with a lot of time, strokes, and attention to detail. But nothing is as fast and effective as the films. I still do follow the films with the strops.

Mark, why do you want to add finer grit stones to your sharpening progression? What are you looking to accomplish? A sharper edge or a finer polished bevels?

I’d try this method as a positioning exercise to help you decide for yourself:
I’d clamp the knife as high up in the vise as you can securely clamp it. Then with the blade portions where the flatter rear portion transitions to the forward curved portion of the blade centered in the vise middle. Then paint the bevel with your marker.

I wouldn’t call it a weak spot…it’s hard to concentrate on stone placement, good sharpening technique, and dangling finger tips all at the same time. Dwight, you are correct it is easier to cut yourself with edge leading strokes. It requires a very high level of attention and conscientiousness to avoid cutting yourself, or, to make use of added external safety measures to help you avoid blade contact and cutting your self.
