Yes kitchen knifes in restaurant can be sharpened with the W.E. 130. Best of luck with your plan. I am sure others will share information as well. I have done a few kitchen knifes but am a new user. Got my W.E. pro pack III  IN September. Hope this help

Welcome to the forum. I am a relatively new user also I purchased my W.E pro pack III in September. I read hunting knife around a 25 degree per side.  I have not sharpened any at that angle yet. When I was looking to purchase a W.E. system I talked to a W.E. staff person. I asked if they ran any special. And was told they have not, other than the discounted items on the site. I hope this helps. I brought a W.E. pro pack III. The results I get are awesome.

w.e. makes a low angle adapter. To do smaller knifes. Also tormek makes a small knife jig the will work with W.E. I am sure some more folks will chime in here as well.
