I did not resharpen it. I just edited my post to be more clear. BTW, I also took some measurements with the blade angled up at ~20 deg and I got a very similar curve while struggling to put the plumb cube against the non-magnetic rod. Delta variation = 3.2 dps. This eliminated the flat rocking but it was a pain to hold, write, etc.
The triangle…[Read more]

Does the dual axis allow you to get direct readings when out of plumb or does it just indicate the out of plumb reading (then you have to rotate the cube) ?

I completed my measurements on my 8 inch Kramer chef knife which is reasonably close to the knife Anthony uses in his simulation. His movie is a great resource to see the impact of knife placement. His simulation predicts about 4.7 dps variation at worst case placement at the heel of the knife (counting the green dots I put in the pic). This knife…[Read more]

You probably need to calibrate your cube. It is also important the hold the diamond handle in the exact position each time to remove the rod/handle wobble. You can also flip the cube 180 deg to check biases. I think the cube is accurate to 01 deg. Your statement of: “So I think the manufacturer’s claims of .1 degree accuracy just means that one of…[Read more]

Nice pics, can you take some angle measurements along the edge (using angle cube on both sides while mounted in clamp), maybe every half inch or so and then graph the data ? I think the curve would be similar to the simulation. Remember to keep the angle cube plumb.
Also, the bevel width is also a function of the blade thickness.

Relative to the dark orange above: I do not know, I started to go back to Anthony’s document and my brain started hurting again. The only thing I can think of is that Ch. 5 focuses on WEPS Gen-1 (non-spherical) and the simulations focus on Gen-2 (spherical), maybe that has something to do with it.

Hmm, with all the equipment in the Patrons workshop that bolster did not look like I would be happy. If you are going to just grind it down then you need to blend the finish into the stock. It makes me wonder who takes care of the $2,000 knives that are out there. Did anyone follow the progression (loosely defined) ? It looks like he went from 4…[Read more]

Justin,
I hear you loud and clear and am surprised I haven’t heard from the regulars here that “sharp is sharp” and good enough to cut anything, etc. However, based on the simulations (which I have physically verified), longish 6, 8, 10 inch kitchen knives especially those which flex and cost $200+ per deserve the best I can do. I know it sounds…[Read more]

I get ya but I think you might be splitting hairs. When I put my straight edge against the edge at large zoom the segment from -.75 to -1.5 actually has a slight upward curve on the order of 1/16″ which is why the red curve goes up vs. downward curve on the previous chef knife with the red curve going down. I am sure Anthony must have run his…[Read more]

I use the depth key all the time (either top or bottom holes) because it holds the AG in place (although it tips a bit). I always place the tip in the center of a square so I just note J7 in my log. How do you hold the AG, the knife and tighten the clamp without having 3 hands – LOL
BTW, where do you live ? I am in NJ.

This is pretty rough but it correlates (I think):
I zoomed in on Anthony’s chef knife on my computer and eyeballed a straight edge against two almost exactly straight segments:
Segment 1: from -3 to -1, 1/16″ deviation from straight, angle change of ~0.4 dps per the simulation prediction
Segment 2: from -4 to -2, 1/32″ deviation from straight,…[Read more]

I downloaded Clay’s circles and lined it up with the Alignment Guide (AG). Being that the AG is used to indicate the position of the tip and the majority of the time this is where the curve is, I think it makes sense to transcribe the curves to the AG. I always make sure the tip is in the AG for repeatability. Maybe the AG should be bigger to…[Read more]

I find myself almost getting cut mostly when tweaking the position of the knife (too many variations to minimize deviations), when using the angle cube (too heavy and clunky) and when holding a flex knife stiff (lack of wide clamp). I think it is fair to ask WEPS if they are addressing these types of shortcomings.

The segments you are calling straight are not “exactly” straight, they are ever so slightly curved. I put a straight edge against my 20 kitchen knives and very few of them have any exactly straight segments.
In Section 6.7.5, Anthony shows a knife with an exactly straight segment:
I also find it interesting that the yellow highlight brings up…[Read more]

Graphite,
I don’t see the contradiction. The 2 sections of the blade which have minimal deviation (<0.1 dps) are the tip (lined up with the cone circle) and the ~1 inch by the heel (straight), the rest of the knife is not straight and will have a deviation curve as a function of the profile. See markup in green below. I wish I could code up t…[Read more]

As a kitchen knife sharpener (only my own + friends), there a 2 things that bug me about WEPS. The first is the lack of a wide clamp to minimize flex in thin knives. It should be a piece of cake to modify the CAD drawing and get them made. The second is the angle “deviation” along non-straight, non-cone circle profiles. I have and will continue to…[Read more]

I have found that my USB at 250x is very inconclusive as to how sharp the edge is and even if a good burr is raised. It is very good at scratch patterns.
For the burr, nothing beats feeling it with fingers along the entire edge (vertical up strokes of on one side only of course).
For sharpness while mounted, I have tried many methods but my go to…[Read more]

Great stuff Graphite, are you an engineer ? A few of my thoughts:
1. You should read Anthony Yan’s work (link below) on this, you are doing the physical verification of his mathematical proofs. Watch the video (second link below) below for optimum placement on a specifically shaped chef knife, it is really cool. The movie simulation works only f…[Read more]
