I can only add I have one of these and it’s absolutely great! Marc can make them to specs (within reasonability) and his “customer service” is great, too! Highly recommended.

Regarding the difference between FFG and FG knives I tend to agree with Graphite.
Many tips have been given already on how to clamp them. I always use a piece of chamois, which works fine for me, but I think Tom’s method also works very well (and may be even more accurate).

More than once I seem to agree with Organic and Marc.

A stropped knife will loose the wire edge, but stropping will also make the edge sharper apart from that (due to burnishing). And if you’re going for a mirror polish, the answer is quicky made.

If I sharpen FFG blades, using some chamois works great, no need to add foam.

Just to answer part of my own question, I found this on the web. It’s a turkey, not a chicken, but it seems quite helpful.
Still, my question remains: is it better to spatchcock or cut up the chicken before putting it in the oven or doesn’t it really matter?

Welcome to the forum, Justin! I also tried the WE130 vise (and I am expecting a permanent one…) and I can confirm it works much easier than the older one. Last weekend I grilled for the first time a complete chicken in my oven without spatchcocking (learned a new word 🙂 ) it first. It was quite a success and we loved the chicken taste and its crispy skin. On another forum there is currently a thread on when to strop. Quite a few people strop (or at least remove their burrs) after every stone. I’ve never stropped after every stone, although I usually do try to remove the burr after every stone.
Are there more people here who strop after every stone? And does it have any effect on the quality of your edges?
