I use alternating side edge leading strokes as my last sharpening strokes with each grit I use in my sharpening progression. That is left side-right side-left-right strokes that are down and onto to the knife edge. This removes any formed burr and exposes the sharpness you applied with each grit stone you use.

I ran into this same dilemma sharpening my Wusthof knives when I first started using my first W.E. sharpener. I went so far as contacting the Wusthof technical services directly for clarification. At that time, about 5 or so years ago they were recommending just what JimR posted above. I posted their response letter here on this forum and got…[Read more]

I posted the link above. I did not see your knife listed.
Based on my personal experience sharpening my own Wusthof knives 17° per side is a good balanced angle for sharpness, keeness and edge durability and longevity.

Welcome to the W.E. forum Steve.
Can you elaborate on what specific subject matter you are looking for in a data base. The knowledge base has quite a bit of information. Some of the subjects discussed may include a data base.

000Robert: That’s the crux of it right there.
If we had a mission statement here for the Wicked Edge Forum I think it would be: we are here to help educate W.E. users so they can learn how to use or operate their sharpeners well. To make their sharpening experience productive, successful, and enjoyable.
We help by sharing our user e…[Read more]

I did not misconstrue your post thinking you were meaning, directing to, or talking about me.
What I take exception with is your use of “most people”. I think the issue described of damaged edge steel as the result of bad heat treatment or overheated edge grinds is far less common then you’re choice of words suggests it to be.
I maintain…[Read more]

I’ve participated and contributed to this forum for several years now to help many Wicked Edge users learn how to sharpen their knives with their W.E. Systems. I’m not sure who the “most people with problems with their new knife edges” are that 000Robert is referring to.
I propose for these people that have to remove and reprofile their new…[Read more]

I use alternating side scrubbing strokes, as the first sharpening strokes, with each and every grit sharpening mediums, on every knife I sharpen or touch up. The aggressiveness I use and the amount of steel I remove is intentional and is determined by my applied pressure and the force employed with the scrubbing strokes against the knife edge. …[Read more]

Couple things to look at:
Are your stones broken in yet? It takes a minimum of ten knives to just get them started on the way. Are you using each grit long enough. Longer is better then not long enough. You can not over do it.
Consistency is key. Strive for consistent finger position on the sharpening stones and consistent finger pres…[Read more]

Marc H replied to the topic Question: Default setup to achieve matching guide rod angles in the forum Techniques and Sharpening Strategies 3 years, 7 months ago
KMe, every part of the WE130 can possibly contribute to these slight differences you’re seeing. The tolerance of the screw holes used to mount the square bar and the screws that secure the vise, each impart a little to these observed differences.
To tell you the truth all that doesn’t matter. What matters is how you position your guide rod ba…[Read more]

Marc H replied to the topic Question: Default setup to achieve matching guide rod angles in the forum Techniques and Sharpening Strategies 3 years, 7 months ago
KMe, if you are simply trying to determine how close to equal the guide angles are from side to side. That is to determine if your WE130 is square. You can position the guide rods how you described in your original post using the same indent hole positions with the micro-adjuster screws backed-in all the way on both sides.
Then with something l…[Read more]

Marc H replied to the topic Question: Default setup to achieve matching guide rod angles in the forum Techniques and Sharpening Strategies 3 years, 7 months ago
Welcome to the W.E. forum, KMe.
To calibrate the guide rod angles is to position them so their positions correlate with the readings of an instrument. In our case the instrument is a properly zeroed-out digital angle cube. Then the guide rods are calibrated “relative” to this instrument, this angle cube.
What you’re describing is simply p…[Read more]

Het is…[Read more]

Marc H replied to the topic 1500/Platens Vs Ceramics in the forum Abrasives 3 years, 8 months ago
Your whole premise is wrong…The diamonds aren’t performing. They’re inert. They are simply sorted somewhat by size then attached on a steel flat bar with a nickel plating. Then they are dragged across the knife’s steel alloys in order to scratch the bevels. The diamonds don’t do anything. The steel matrix that is being scratched and goug…[Read more]

Welcome to the Wicked Edge forum, Bryce Herbst.
I’m a proponent of using the sharpening medium that will sharpen your knife’s steel the best. Your fears of damaging those steels are well founded and based in real experiences. Harder steels such as you related, harder than HRc 59-60 can be more on the brittle side and may suffer damage in th…[Read more]

Making use of blue painters tape allied to the knife’s sides will protect the blade steel from unwanted scratches that can and will happen during sharpening. Also wrapping the knife’s slot and the hinge mechanism will keep steel dust and diamond abrasive out the works.
New stones as you use then during the break-in period will slough off loose…[Read more]
