Clay, I think you may have hit the correct “temporarily”. I just spent my corona evening doing my best scope analysis at home on my 6 month old 2200/3000 paddles with my 3+ years old 100-1500 paddles. Nothing too fancy but here is what I did (all numbers are grit):

How about this: drill 2 opposite side square holes to fit a WEPS paddle at say 16 and 18 degs so we can use any of our paddles instead of a ceramic. I find that under a scope those ceramics put a much coarser scratch pattern than the 1200 grit they claim. Ceramic is just different. So, I went away from the sharpie approach because for a knife in the WEPS for the 1st time it seemed like an inefficient way to do it. I have had my stones (100 thru the diamond films) for a few years now. I recently added the 2200/3000 stone which should fit between the 1500 stone and the films. I have mostly kitchen knives. I have found that doing anything without a jig (WEPS) introduces variability in “finding” the precise bevel to apex plane. If you have a micro bevel then it is even more difficult. Although I do not have any 440C knives, I have read quite a bit on it. I would call it a tenacious steel very sensitive to good and bad heat and cryo treating. Take a look at Jay Fisher’s work with it. His finished products start at $3K.

Buy her a knife of AEB-L picked out just for her. Victorinox is mid grade at best, meaning it will get sharp but not last long. Look up District Cutlery in DC. They make heirloom quality stuff for $300 each. It makes me tear holding their stuff (almost – LOL).

I have attached small strips of chamois leather to the two insides of the clamp which contact the blade using extra sticky double sided tape. It says there all the time and works great. Mine have been on for over a year.

Sounds like your wife has a heavy hand (no offense). My wife likes duller blades also. Extra sharp is not for everyone.

Hmm, I would definitely return it, probably a bad batch of steel or heat treat (poor Quality Control, IMO).

Looks to me like some nasty damage, maybe chemical, to the bevel from prior use. Did you get any before sharpening pics ? Can you use the diamonds to grind it out ?

I got rid of ceramics a long time ago because of similar issues. They feel different, they are different and really did nothing for me. I also get very annoyed when thinking about break-in because to me they should ALL be broken in at the factory. Hmm, tomorrow I will check Verhoeven’s electron microscope (EM) disertations on the measured width of an apex. It can only approach 0. The limit interests me. The question might be what can you cut twice or more. The tip of an EM probe is supposedly one atom in diameter. Thought provoking for sure for us amateur material scientists.

Terry, you can definitely feel a burr raised with 100 grit with an edge trailing vertical finger swipe on the side the burr bends toward. To me it is much more definitive than reflections or my 250X cheapo scope. You can can do this and verify you have it across the entire edge.
