Tojiro DP Hollow Edge Santoku Knife

    I just bought a Tojiro DP Hollow Edge Santoku Knife. It’s VG-10 core Steel and Rockwell 60. It’s my first hard steel narrow bevel angle knife. I have the Pro Pac II. Will I do harm to the knife if I sharpen it with my diamond plates. I watched Clay’s YouTube Video of him sharpening a similar knife to 12dps. He used Chosera Stone Plates. It’s not a real expensive knife but I hate to chip or damage the steel.

    No, not at all if you follow the rules. Use light pressures, that’s the most important one.

    Where did you get a hollow (concave?) Tojiro DP from, by the way? I only know them as convex knives.

    The knife has hollow ground dimples inside the edge supposedly to keep food from sticking. I bought it from Cutlery and More.

    I’ll use very light pressure with the diamonds.

    From what I have read, you should ensure your stones are broken in well before you use them on this particular knife if it is not a “practice” knife.
