Be very careful with down and on, edge-leading strokes!  Watch that your fingers are safely positioned on the sharpening stones and not dangling or exposed to the sharpened knife edge.

WE just released a new upgraded version of Low Angle Adapter. I would expect it to ba back in stock soon. W.E. released a lot of new models recently. I suspect they are just backed up trying to meet the new demand.

John. I do each and every grit or stone I use the same. I start with scrubbing strokes individually, each side, then alternatingly to draw a burr evening it out on both sides of the knife across the entire blade length.

Here’s a great old question that was recently presented to me, again. To let you WE users know whether it’s a new or older model, we’re here to help at this facebook group and at this Forum also.

Try to look at the break-in differently. You are figuring or using a counting method that will mechanically get the stones broken in with time and effort. The precision and accuracy is there. It’s for you to utilize.  I see +/-0.03º with due diligence, effort and attention to details. It’s more work than is needed to achieve a very nicely sharpened knife.  The precision will allow you to go as far as you want to, to explore “how sharp is sharp”
