Welcome in the forum! … the sharpie is I think one of the most usefull tool that don’t come with the WE.
Im a newbi and i’ve just done a Giesser messer it was pretty usefull to check out the edge angle that the previous sharpener guy did on it.
It’s an edition that is not sold anymore. the asian style knife … one side bevel like shun i would say.
The guy that sharpen it have done a 20° bevel each side and its with the sharpie that ive found that.
finaly i’ve reprofiled it to 13° one one side and juste grind the burr on the other side… its more like it’s suposed to be i gess…. ( i have wrote to giesser and ain’t got any answer)
So … put a couple of sharpies in your kit…. you will love it!
