I have too many nicked up dull knives. Hello guys and gals. First off, apologies to Clay for the play on words in my board handle. Believe me no disrespect intended, just a flash of humor while thinking of a “nick” name for the Boards.
My name is George I’m 66YO, now retired from a career as Senior Specialist from a special district in Sonoma County. Specialist of course means you’ll do whatever comes up whether it be investigations, instrumentation, or litigation. As one of my hobby/passions I’ve been shooting professional fireworks displays for about 35 years. Hence the reason for the picture of a “Powder Monkey” as my avatar. I’ve also loved to cook since I was a kid. As an army brat throughout the States, Europe and Asia I’ve had plenty of opportunity to try a lot of different cuisines and styles. Because of those travels as a kid and an adult I have a pretty fair sized collection of kitchen cutlery. I’ve been super frustrated as one of those individuals who could never get the hang of freehand sharpening and as a result I have a large selection of blades that are in dire need of attention. I’m very happy with the current level of technology and innovation that makes my lack of that skillset an acceptable shortcoming. I’ve enjoyed exchanging a number of emails with Mark over at Chef Knives to Go and his advice has always been beneficial and unbiased. Well…unbiased except he makes no bones about the fact that freehand sharpening is his preference. I look forward to learning and participating where I can.
