    I have too many nicked up dull knives. Hello guys and gals. First off, apologies to Clay for the play on words in my board handle. Believe me no disrespect intended, just a flash of humor while thinking of a “nick” name for the Boards.

    My name is George I’m 66YO, now retired from a career as Senior Specialist from a special district in Sonoma County. Specialist of course means you’ll do whatever comes up whether it be investigations, instrumentation, or litigation. As one of my hobby/passions I’ve been shooting professional fireworks displays for about 35 years. Hence the reason for the picture of a “Powder Monkey” as my avatar. I’ve also loved to cook since I was a kid. As an army brat throughout the States, Europe and Asia I’ve had plenty of opportunity to try a lot of different cuisines and styles. Because of those travels as a kid and an adult I have a pretty fair sized collection of kitchen cutlery.  I’ve been super frustrated as one of those individuals who could never get the hang of freehand sharpening and as a result I have a large selection of blades that are in dire need of attention. I’m very happy with the current level of technology and innovation that makes my lack of that skillset an acceptable shortcoming. I’ve enjoyed exchanging a number of emails with Mark over at Chef Knives to Go and his advice has always been beneficial and unbiased.  Well…unbiased except he makes no bones about the fact that freehand sharpening is his preference. I look forward to learning and participating where I can.

    Welcome George! People seem to fall into a tribal mentality about their sharpening method of choice. Free hand is a very versatile way to sharpen . While I can sharpen that way, I’m just not very good at it. The WE makes that lack of skill a non-issue; I can repeatedly get amazing results.

    Welcome George, thanks for the background. Ton of great info here! Which Wicked Edge sharpener did you end up getting, or are you still undecided?

    TC, Thanks! actually I couldn’t believe the nick was still available as a user name, it just seemed so obvious! and believe me the natural pronunciation for me is three syllables too.

    Hi Josh, I’m away from the US for the remainder of a couple months but the WE130 is what I’m thinking.

    The WE130 is a great choice for a starting point system that will allow you to do everything. If you can swing the funds the Pro Pack 3 gives you everything you’ll want and most probably get very soon after the initial purchase of just the WE130, and all in one box, to start.

    Thanx for the inspiration! My love of nicnacs told me to tag along for the ride.

    I too am a 66yo taking up sharpening to supplement my income, down in the land of Oz. My 130 is on it’s way.
