Would you recommend and why few of this brands which you have ?
Are they carbon steel so they tend to rust if you don’t care about them properly ?
Specially I’m looking for a good utility knife.
02/18/2021 at 8:16 am #56186Can I ask what brands of Japanes knives you have ? I have only one Japanes knife Yaxell ran chef knife 200mm
Did you hear for Eden Kanso Aogami ? and is it any good at all?
02/18/2021 at 2:49 am #56178Hmm yesterday I tried to sharpen smaller knives and it is easy as a walk in park.
No need special attention on anything and I got razor polished blade in matter of 10 minutes. Every mm of blade cutting evenly.
I must say wicked edge is the best tool device or contraption to sharpen your knives.
But I think the best combination for me is Wicked Edge for smaller knives and water stones for big and long blades.

02/16/2021 at 10:21 am #56154I understand but could I ask you for advice ?
I’m trying to sharpen 8″ (20 cm) chef knife, results are for now are just fine for kitchen work, but for my head it is not enough, I just do not get consistency in cutting paper. I mean it can shave hairs at least on few parts of the blade but what can I do furthermore to get every part of blade to cut evenly ? please if you have any advice maybe something you do so its working for your knives.
I have find sweet spot, ink from marker is completely is removed by stroking from heel to tip. I have right angles (with angle cube) and micro adjustments are tight. Is it possible that is a too big knife ?
I just want the knife to cut evenly all along the whole blade.
02/15/2021 at 3:45 pm #56146Hello Richard, thank you, glad to be here.
I am using Yinama USB Microscope and only the LED light provided from microscope, which is also adjustable. Also, it has Wifi feature which is for me must have.

02/15/2021 at 1:15 pm #56135Satisfied? That’s hard to say because in start it was terrible and yes now is much better, there is almost no tearing pretty good cut, clean no fibers sticking, but there are few spots where it cuts better than on others. It needs to be better from that or just I want to be better at that.
I’ve read all links you have gave me, they are useful.
Tomorrow I will try again to sharpen maybe I can achieve even better results than today.
Can you tell me more how to achieve or put a link about the keenness of the apex ?
02/15/2021 at 11:46 am #56129I haven’t try to cut yet. Both sides are in these pictures.
Here some more pictures looking from above on apex I guess.
From looking above can we learn something is blade sharpen in proper way or not ?
Do you have some advice on what kind of paper I should try cutting ? Maybe phone book paper ?

02/14/2021 at 5:48 am #56109Thanks for video links, this about strokes could prove useful Im going to try later to make like that guy.
How much strokes do you think i need like 400# 50x and than 600# 100x ? 800# 150x and 1000# 200 times ?
I have angle cube and angle is about 1 degree of differences, but im pretty sure when I sharpen on water stones I can not get that accurately and still I manage to get razor sharp.
Also I have microscope usb type, I`ve seen my blade and it has deep scratches on few parts but seems to me that diamond stone can not get in few spots as well it can in others.
