    If you, like me, have a collection of nice Japanese kitchen knives (hard, tough, wear-resistant and of course beautiful), you probably like to cut your food well.     Those are cool. I would be worried about getting scratches in those because they’re so beautiful to look at.

    Perhaps it is also well suited for finely dicing peyote.

    LOL about the mushrooms and the peyote.

    Those are cool. I would be worried about getting scratches in those because they’re so beautiful to look at.

    When I use them seriously, I usually put one of those $1 IKEA thin plastic cutting boards on them. Problem is, my knives are often so sharp I’ve destroyed three of those cutting boards already .

    They are all end-grain cutting boards. Is that what you mean?

    As I understand it, the main reason to use an end grain cutting board is to give your knives a soft and resilient surface to cut on. If you cover that with a plastic mat, doesn’t that negate this desireable attribute?

    That’s correct. But the IKEA plastic boards are also very soft and resilient (and thin). I didn’t cut them accidentally

    Sorry…. then you may as well use any wood board under the Ikea and not bother with the “Work of Art” boards because your negating the attributes of using end cut wood.

    Sure. But my wood boards look very good and I only use the IKEA boards only occasionally.
