After finishing a knife at say 15 degrees and want to put a micro bevel on it or even convexing the edge, what grit stone do you go to when you start to put the secondary edge on? Thank you for your help!

Depends a bit on the steel and what grit you finished at, but 90% of the time I use the 1200/1600 ceramics. Maybe the 1000 grits diamonds on a hard steel.

Agreed. Or just when I want a toothier edge.

It all depends on what you want… I finish my edge to whatever aesthetic finish I want, and then put the micro bevel on with the 600 grit diamond stones for a very toothy finish (which i love for edc). I do lightly strop ( after lowering the angle a few degrees) with the 3.5um pasted strops (maybe 10-20 passes per side)
