If you want a good intro to sharpening, track down and watch Modern Marvels - The World’s Sharpest. Everything from kitchen knives to plasma cutters, a glimpse into factory sharpening of knives, shredders, milling blades, etc. Even get a good view of a burr if you’re not familiar with what one is.
Couldn’t find a place online to watch it, but you can get a copy thru Amazon or iTunes… or just wait for a rerun. 
I believe I saw that one. It’s been awhile but I seem to recall them comparing and contrasting, much like we do here, just what different types of sharp were needed for each differing job. It stuck with me even though I saw that way before I found you guys here. Funny how certain principles find their way across so many disciplines…
