    I have not seen a Victorinox with a wooden handle before I would imagine it must be a classic .

    That’s what we used as meat cutters in the 70’s. Actually we all used a stiff, curved, 6 inch boning knife for most work, a 8″ trimmer and a breaking knife. They all had wood handles back then. The health dept got after it cause the said you can not clean a wood handle like you can a plastic? The old school believed the wood handles were not as slippery as plastic? It was drama back in the day!
