    That Shun yanagiba is a nice one! Did you use some sort of stabilizer?

    i did not. it is like 10.5 inches long, but stout blade. – very little flexing.

    i will say this, if i have another knife of this type, i probably will not use the WE. i did a great job and the yanagiba became very sharp, but i feel water stone sharpening would have been a better choice. i have no water and i do carry my water stones with me at times, but not at this fair.
    .
    now the really long Forschner slicer which i call Foresters in my video could have really used some stabilization – very flexible long blade.
