4) Different sharpness test for different blade angles/geometry/finishes?
Background:
I know the best way to test a knife is to test the task its going to be used for but as I’m practicing I don’t always have a use in mind. I know of lots of different tests like: finger nails, running skin of thumb across, push cut, slicing paper, shaving hair, turning a knife while cutting paper. After my one knife was having trouble with hair/paper but did great with push cuts and would catch and not want to move on my finger nail, which got me to thinking maybe there were reasons certain tests seemed to work better than others.
