    Hi, I’m a microbiologist by training, a sword-based martial artist, and a cook who appreciated a razor edge on my knives. I purchased the WE propack I initially for casual use and periodic sharpening of my Wusthof knives over their lifetime as I have watched some of them dull with heavy use.

    I’ve appreciated and benefitted from the advice, videos, and cleaning tips posted by others in the forum and just wanted to introduce myself.

    If you like really nice kitchen knives, give the Roselli UHC knives a look. I have a lot of “decent” kitchen knives but those are hands down my favorites. Currently I have the Astrid chefs knife and the Minnow – technically a fillet knife but it really shines in daily kitchen tasks.
