    Hi all,

    Ive been considering getting a WE convex lit to re-add a convex edge that originally came on my Global kitchen knives. Ive read post after post here and elsewhere on the topic, but my logic (although it may be flawed here) is taking precedence.

    So, if i grind my Global knives to a 15 degree V grind, and follow the WE instructions and increase the angle when creating the convex edge, surely this is going to wear away the very edge of the bevel? Which to my logic, would reduce its sharpness, but increase its durability? Ive also seen a youtube video that suggests the same, the video compared V and convex when cutting, it sound the V needed less effort.

    Contrary to this, the global advertising says their convex edge requires less effort.

    On the global knives, you can visually see a convex grind, but on the shoulder of the bevel, which would make sense. It suggests a V at the edge of the bevel, and a convex at the shoulder, creating less material drag when cutting through food.

    If the difference between the WE instructions and the  global factory is indeed bevel edge vs bevel shoulder, in order to remove the shoulder using the WE convex kit, instead of increasing the angle from the V grind angle, what if i go the other way and reduce the angle to tackle the shoulder?

    Does this sound plausible? What do you guys think?

    It says nothing about shoulders.
    I have the kit but I have not used my kit yet.
