Entrek Knives

Anybody have any experience on Entrek Knives? I’ve got one whose edge chips whenever I sharpen it.

I typically use 22 degrees per side with a 24 degree micro bevel. Highest grit is 1600 ceramics. It chips when I apply the micro bevel. I’ve tried going as high as 25 degrees per side, and 27 degree micro bevel, but I get the same result.

Is it chipping on edge trailing or edge leading passes?

I only do alternating strokes away from me when setting the micro bevel. I try to let the stone do the work, only using enough pressure to keep the stone from tilting. When I bring the stone in contact with the edge I try to be as gentle as possible.
